A day in the kitchen ended up with 10 tasty Ice cream Crumble Muffins. I picked an ice cream in the supermarket with vanilla and strawberry flavour. However, the muffins tasted more of vanilla than strawberry, but I don’t mind, because I am a big ice cream monster!! 😀 If I see a Häagen-Dazs shop… i go faster and faster on the street, just to hurry up to order a delicious Dulce de Leche ice cream… mmmm… 😀
Recipe (makes 10)
Mixture
- 75 gr butter
- 0.75 dl caster sugar
- 1 egg
- 2 1/4 dl plain flour
- 1 teaspoon baking powder
- 1 – 1 ½ dl ice cream
- 2 teaspoons vanilla sugar
Crumble dough
- 1 dl + 1 tablespoon plain flour
- 1 tablespoon vanilla sugar
- 1 ½ tablespoons caster sugar
- 40 gr butter
Mixture:
Preheat the oven to 175 degrees C.
Place 10 paper cases on a baking sheet.
Stir the sugar and butter until fluffy in a bowl.
Add the egg and continue to whisk.
Pour the vanilla sugar, baking powder and flour into the bowl and whisk a bit.
Add the ice cream and continue mixing for a couple more minutes until the mixture is smooth.
Spoon the mixture into the paper cases until two-thirds full.
Crumble dough:
Put flour, vanilla sugar, caster sugar and butter into a bowl.
Work all together until you get a smooth and firm dough.
Sprinkle the crumble dough over the paper cases.
Ice cream Crumble Muffins:
Bake in the middle of the oven for about 15-20 minutes.
Allow to cool before being served.
