Happy Birthday Sugar and Spice Baking 2 years old! 😀 Today, is 2 years ago, since I started my Blog Sugar and Spice Baking. To celebrate it, I have baked a Princess cake with creamy vanilla custard, vanilla cream and strawberry jam….On top of that, a yummy strawberry marzipan cover… It’s an easy cake to make, it’s just the marzipan cover which can be a bit tricky to put on. 😉

Ingredients:

  • Sponge cake
  • 300 ml creamy vanilla custard
  • 400 ml cream, mixed with 3 teaspoons vanilla sugar
  • 100 ml strawberry jam
  • pre-made strawberry marzipan
  • roses of marzipan
  • icing sugar

Apple Nutmeg and Cinnamon Sponge Cake

This Apple Nutmeg and Cinnamon Sponge Cake is definitely a delicious treat. It even tastes better after being in the fridge over the night. The cake is moist, spicy and sweet and if  you start eating one slice, you just want to eat one more. 😀

Recipe

  • 50 g butter
  • 2 eggs
  • 2 dl granulated sugar
  • 3 dl plain flour
  • 2 teaspoons baking powder
  • 1 tablespoon vanilla sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 dl milk
  • 3-4 Golden Delicious apples, chopped into cubes

Grease a loaf tin. Sprinkle the loaf tin with golden bread crumbs.

Melt the butter and let it cool or let it rest at room temperature until it is soft.

Whisk the eggs and sugar until fluffy.

Mix the flour, baking powder, nutmeg, cinnamon and vanilla sugar. Add it into the egg mixture. Pour the butter and milk into the mixture. Finally add the chopped apple pieces. Stir until the mixture is smooth.

Pour it into the loaf tin.

Bake it at the bottom of the oven at 175 degrees C for about 35 minutes.

Take the cake out from the oven and let it rest in the tin for a couple of minutes before you finally let it rest on a wire rack.

Celebrating Cinnamon Bun Day ‘Kanelbullens dag’ with Cinnamon Buns filled with creamy Vanilla Custard

In Sweden we celebrate the Cinnamon Bun Day ‘Kanelbullens dag’. The Cinnamon Bun Day started in 1999 when the Home Baking Council (Hembakningsrådet) celebrated its 40th anniversary. The day was created to celebrate Sweden’s rich tradition of bullar, or buns, and now it has become a tradition held every year on October 4. Enjoy todays Swedish Cinnamon Buns filled with creamy Vanilla Custard… delicious! 😀

Vanilla Custard Cinnamon Buns

Recipe (makes about 50 buns)

Dough

  • 500 ml milk
  • 50 g fresh yeast
  • 200 g granulated sugar
  • 200 g butter, at room temperature
  • 2 teaspoons salt
  • 2.5 teaspoons cardamom
  • 1.1 kg plain flour

Filling

  • 100 g butter, at room temperature
  • 2 teaspoons cinnamon
  • 100 ml granulated sugar

Vanilla Custard

  • 250 ml milk
  • 3 teaspoons vanilla extract
  • 2 tablespoons maizena (corn starch)
  • 0.5 tablespoon plain flour
  • 3 egg yolks
  • 4 tablespoons granulated sugar
  • 15 g butter

Decoration

  • egg for brushing
  • pearl sugar

Vanilla Custard:

Start with making the Vanilla Custard.

Heat up the milk and the vanilla extract in a saucepan. Put aside. Mix the maizena (corn starch) and plain flour. Add the egg yolks and sugar. Whisk it all together.

Add a bit of the hot milk mixture into the egg mixture and whisk for a bit. Thereafter, pour the egg mixture into the saucepan with the milk mixture and give it a good whisk.

Put the saucepan on a low heat and heat up until boiling. Whisk all the time.

Add the butter when the cream has thickened.

Allow the cream to cool and put it afterwards into the fridge. Stir once in a while.

Dough:

Heat up the milk to 37 degrees C.

Mix all the ingredients in a kitchen aid and let the mixer work the dough for about 15 minutes until the dough is smooth and firm.

Cover the dough with a tea towel and allow it to rise for about 30 minutes.

Work the dough thoroughly on the baking table.

Cut it into two halves and roll each half out into a rectangular square.

Spread the butter, cinnamon and sugar mixture on the rectangular square of dough.

Roll the dough into a length and cut it into pieces.

Put the pieces of dough in paper cases and allow the buns to rise for about 30 minutes more under a tea towel.

Heat up the oven to 225 degrees C.

Cinnamon buns:

Pipe vanilla custard in the middle of each bun.

Brush the buns with a slightly whisked egg and sprinkle them with pearl sugar.

Bake in the middle of the oven for about 8-10 minutes.

Swedish Mocha Squares/Love Yummy

This Swedish treat has got a few different names such as Mocha Squares (Mockarutor) and Love Yummy (Kärleksmums). A very nice and yummy chocolate treat. The cake is coated with a chocolate ganache and coconut. 😀

Recipe (makes 25-35 slices)

Mixture

  • 2 eggs
  • 3 dl granulated sugar
  • 1 1/2 dl whole milk
  • 4 1/2 dl plain flour
  • 2 teaspoons vanilla sugar
  • 1 tablespoon cocoa
  • 150 g melted butter
  • 2 teaspoons baking powder

Ganache

  • 3 1/2 dl icing sugar
  • 4 tablespoons melted butter
  • 4 tablespoons strong cold coffee
  • 1 tablespoon cocoa
  • 2 teaspoons vanilla sugar

Decoration

  • coconut to sprinkle

Stir the eggs and sugar until fluffy.

Add the vanilla sugar, cocoa and baking powder into the mixture.

Then, stir in the flour and milk until everything is just incorporated.

Finally, add the melted butter and mix it all together.

Pour the mixture into the baking sheet and bake in the middle of the oven at 175 degrees for 25 minutes.

Mix the melted butter, coffee, cocoa, vanilla sugar and icing sugar together until you get a smooth mixture.

Pour the ganache on top of the warm cake.

Finally, sprinkle the cake with coconut.

Cut the cake into square pieces.

One year ago, I started my Baking Blog, Sugar and Spice Baking, without knowledge about how to create a Blog. This year has been amazing and rewarding, despite the fact that I’ve been forced to go to the gym a bit more often.. hehehe.

My boyfriend James, gave me Mr. Croco, and for some reason I decided to involve Mr. Croco in the Blog due to that he looks a bit cute and funny with his eyes and smile. You have also met Mr. Croco’s friends, Mr. Octo and Mr. Water-Draggo, in earlier Blog posts. They are on “holiday” now, but Mr. Croco is here to celebrate with you guys. 😀 He has baked Sugar and Spice Baking’s Fruit Vanilla Cream Cake and on top of that he also baked some yummy Vanilla Muffins. Lemon and Cardamom Buns… Happy Birthday Sugar and Spice Baking 11 months!

Hello Everyone! Now it’s time for some Sugar and Spice time again! 😀 Mr. Croco, Mr. Octo and Mr. Water Draggo are celebrating the Swedish National Day and Sugar and Spice Baking 11 months Anniversary. One more month to go before it’s 1 year!! Time flies away. Lots of flour, butter, eggs etc. and most of all time have been used during these 11 months and it has been great fun! I have baked a various selection of pastries; from my Hummingbird Spinach and Cheese muffins to Swedish Dream Cookies and different kind of Chocolate Cakes. Today, I will share a new Swedish recipe with you; Lemon and Cardamom Buns. A sweet and spicy bun for you to indulge when you want a special treat. Recipe (makes 30 buns)

  • 150 g butter
  • 5 dl milk
  • 50 g dry yeast
  • 1 1/2 dl white syrup
  • 1/2 teaspoon salt
  • 2 teaspoons cardamom
  • 850 g plain flour

Filling

  • 100 g butter
  • 1 1/2 dl granulated sugar
  • 1 teaspoon cardamom
  • finely grated rind of lemon

Brushing

  • 1 egg
  • pearl sugar

Melt the butter. Add the milk and heat to 40 degrees C.

Put the dry yeast in a bowl and add a bit of the liquid until the yeast has resolved. When done, add the rest of the butter/milk liquid.

Stir in the syrup, salt, cardamom and flour and work thorough until you have a smooth and firm dough.

Let it rest for about 60-70 minutes.

Cut the dough into two halves and roll out each piece of dough into a rectangle about 1 cm thick.

Spread the filling on the dough and fold in 1/3 of the dough towards the middle and then fold in the rest of the dough.  Do the same thing with the other piece of dough.

Cut out triangles of the rectangles and place them onto a baking sheet. Brush them with a ready whisked egg and sprinkle them with pearl sugar.

Put the oven on to 225 degrees C.

Bake the buns in the middle of the oven for about 10 minutes.

Gingerbread Swiss roll with Lingonberry Cream

Mmmm… who doesn’t love Gingerbread? Who doesn’t love Swiss roll? How about combining those two favourites in a single yummy cake?? 😀 The Gingerbread Swiss roll with Lingonberry Cream is a spicy, creamy, moist and sweet cake. Perfect for Christmas and is also absolutely delicious all-year-round. The Swedish Lingonberry jam is a great fit to the spicy ingredients such as ginger and cloves. 😀

Recipe (makes 15 slices)

Swiss Roll

  • 3 eggs
  • 1 1/2 dl granulated sugar
  • 2 dl plain flour
  • 1 teaspoon ginger
  • 2 teaspoons cinnamon
  • 1 teaspoon cloves
  • 1 teaspoon cardamom
  • 1/2 teaspoon bicarbonate of soda
  • 2 tablespoon sour milk or yoghurt

Filling

  • 2 1/2 dl single cream
  • 1 1/4 dl Lingonberry jam

Preheat the oven to 225 degrees C.

Whisk eggs and sugar until fluffy.

Mix the dry ingredients. Pour them into the egg and sugar mixture and stir well. Finally, stir in the sour milk/yoghurt.

Spread the mixture over the parchment paper onto a baking sheet. Bake in the middle of the oven for about 5-6 minutes.

Sweeten the cake on the surface with granulated sugar and place it on a parchment paper.

Cover the cake with a bit damp tea towel and let it cool.

Whisk the cream until fluffy and mix it with the Lingonberry jam. Spread the cream over the cake and roll it. Put it afterwards in the freezer. Take it out about 30 minutes before serving.
