The Spanish Hot Chocolate Muffins

I found some paper cases in the spanish colours in my cupboard so I decided to bake some chocolate muffins. This is my own new experiment and I named them The Spanish Hot Chocolate Muffins… They were very tasty and packed with flavour …yum yum yum 😀

Recipe (makes 12 small muffins)

  • 60 gr unsalted butter, at room temperature
  • ½ dl granulated sugar
  • 1 egg
  • 2 1/4 dl plain flour
  • 1 teaspoon baking powder
  • 0.75 dl whole milk
  • 1 ½ teaspoons vanilla extract
  • 1 tablespoon chocolate syrup
  • 3 teaspoons cocoa powder
  • 25 gr dark chocolate

Preheat the oven to 170 degrees C (325 degrees F) Gas 3.

Stir the granulated sugar and butter until fluffy in a bowl. Add the egg and continue to whisk. Pour  the vanilla extract, baking powder, chocolate syrup, cocoa powder and flour into the bowl.  Add the milk and continue mixing for a couple more minutes until the mixture is smooth. Finally, pour the finely chopped chocolate pieces into the mixture and stir until everything is just incorporated.

Spoon the mixture into the paper cases until two-thirds full.

 Bake in the preheated oven for about 20 minutes and the cake bounces back when touched. Leave the muffins to cool slightly in the pan before turning out onto a wire rack to cool completely.
