Toffee Cupcakes (with homemade Toffee sauce)

I must say that these Toffee Cupcakes I made yesterday taste absolutely AMAZING!!! If you do love toffee… this is absolutely something you must try to bake!!! You will NOT regret it! 😀

They have a rich and smooth flavour of … TOFFEE.. of course!! 😀 Mmmmm…


Recipe (makes 10-14; it depends on how big the paper cases are)

Toffee sauce (without cream)

  • 2 tablespoons unsalted butter
  • 1 ½ teaspoons vanilla sugar
  • 1 teaspoon cacao
  • a pinch of salt
  • 1 dl golden syrup
  • 1 dl whole milk
  • 1 tablespoon potato flour


  • 75 gr butter
  • 0.75 dl caster sugar
  • 1 egg
  • 2 1/4 dl plain flour
  • 1 teaspoon baking powder
  • 1 ½ dl homemade toffee sauce
  • 2 teaspoons vanilla sugar

Toffee Frosting 

  • 250 gr (2 cups) icing/confectioners’ sugar
  • 80 gr (5 tablespoons) unsalted butter, at room temperature
  • 4 tablespoons homemade toffee sauce

For decoration

  • chocolate sugar strands

Toffee sauce: 

Pour the milk, caster sugar, syrup, salt and cacao into a saucepan.

Let it boil on medium heat for 5 minutes whilst you stir it all the time.

Add the potato flour and continue to stir 5 minutes more.

Remove the pan from the stove and stir in the vanilla sugar and butter.

Allow to cool so the consistency will be good.


Preheat the oven to 175 degrees C.

Place 10-14 paper cases on a baking sheet.

Stir the sugar and butter until fluffy in a bowl.

Add the egg and continue to whisk.

Pour the vanilla sugar, baking powder and flour into the bowl and whisk a bit.

Add the homemade toffee sauce and continue mixing for a couple of minutes more until the mixture is smooth.

Spoon the mixture into the paper cases until two-thirds full.

Bake them in the middle of the oven for 15-20 minutes.

Allow the muffins to cool!

Toffee Frosting: 

Beat the icing/confectioners’ sugar and butter in a bowl until the mixture comes together and is well mixed.

Add the toffee sauce to the butter mixture and beat until the frosting is light and fluffy, at least 5 minutes. The longer the frosting is beaten, the fluffier and lighter it becomes.

Toffee Cupcakes: 

Pipe the frosting on top of the cupcakes and decorate with chocolate sugar strands.

Here come the Toffee Cupcakes again! 😀

    • Hahahaha!! Thanks and yes!! That is a very good question! I just love baking and enjoy to try new things to improve my baking skills. I have 7 nieces and nephews, a hungry boyfriend and a lovely family! Hahaha. I wish I lived close as well… then I would feed you and your family with cakes every week! I have said it before, but must say it again… your kids look absolutely gorgeous!!
