Recipe (makes 12-16)
- 120 g (1 cup) plain flour
- 140 g (a scant 3/4 cup) caster sugar
- 1 ½ teaspoons baking powder
- a pinch of salt
- 50 gr (3 tablespoons) unsalted butter, at room temperature
- 120 ml (½ cup) whole milk
- 1 egg
- 1/2 teaspoon pure vanilla extract
- 250 g (2 cups) icing/confectioners’ sugar
- 80 g (5 tablespoons) unsalted butter, at room temperature
- 2 tablespoons whole milk
- ½ teaspoon pure vanilla extract
- 1 teaspoon Dr. Oetker’s yellow colour
- sugar strands
- round toffee chocolate pieces
- orange sweets
Preheat the oven to 170 degrees (325 degrees F) Gas 3.
Put the flour, sugar, baking powder, salt and butter in a bowl and whisk until you get a sandy consistency and everything is combined.
Gradually pour in half the milk and beat until the milk is just incorporated.
Whisk the egg, vanilla extract and remaining milk together in a separate bowl for a few seconds, then pour into the flour mixture and continue beating until just incorporated (scrape any unmixed ingredients from the side of the bowl with a rubber spatula). Continue mixing for a couple more minutes until the mixture is smooth. Do not overmix.
Spoon the mixture into the paper cases until two-thirds full.
Bake in the preheated oven for 20-25 mins, or until light golden and the cake bounces back when touched. A skewer inserted in the centre should come out clean. Leave the cupcakes to cool slightly in the pan before turning out onto a wire rack to cool completely.
Beat the icing/confectioners’ sugar and butter in a bowl until the mixture comes together and is well mixed.
Combine the milk and vanilla extract in a separate bowl, then add to the butter mixture a little at a time. Beat until the frosting is light and fluffy, at least 5 minutes. The longer the frosting is beaten, the fluffier and lighter it becomes.
Pour 1 teaspoon of Dr. Oetker’s yellow colour into the bowl and whisk until the whole frosting is yellow.
Spoon or pipe the frosting on top of the cupcakes and decorate with toffee chocolate pieces, orange sweets which are cut as beaks and cock’s crests.
Finally take some of the sugar strands and use them as eyelashes on the chickens.
