The second cookie I want to show you is “Finska pinnar” (Finnish Sticks in English). 😀
They are very easy to make and taste very nice (however, my cookies don’t look like proper sticks, so you may excuse me). 😀 If you want to touch them up a bit, you can always add some Swedish Vanilla sugar into the dough. 😀 I know, I know… I am addicted to Vanilla sugar… 😀
Recipe (makes 20)
- 2 1/4 dl plain flour
- 1/4 dl caster sugar
- 100 gr butter
Brushing and Decoration
- egg white
- chopped sweet almond
- Swedish pearl sugar
Put some parchment paper on a baking sheet.
Put the flour into a bowl. In the centre of the bowl place the butter and sugar. Use a knife and chop the ingredients into smaller pieces. Thereafter, work the ingredients all together into a dough.
Let the dough rest in the fridge for about 30-60 minutes.
Preheat the oven to 175 degrees C.
Roll the dough into lengths and place them onto the baking sheet.
Brush the lengths with egg white and sprinkle them afterwards with the chopped sweet almond and pearl sugar.
Cut the lengths into 2 cms wide cookies.
Bake them in the middle of the oven for about 10-12 minutes.
Cut the ugly edges off.
Let them rest a bit in the fridge before being served. You can store them in the fridge or in the freezer.
