I will start my British Week with a Lemon Cake…. mmmmm…yummy!
Recipe (makes 8 big slices)
- 100 gr butter
- 150 gr self raising flour
- 5 ml baking powder
- 150 gr caster sugar
- 2 large eggs
- 60 ml milk
- finely grated rind of lemon
- 100 gr granulated sugar
- juice of the lemon
Preheat the oven at 175 degrees C.
Grease and line an oblong tin 17cm x 23cm x 2.5cm (I used an oval one).
Put all ingredients into bowl and mix until everything is just incorporated.
Pour mixture into prepared tin and bake in centre of oven for 30 mins.
As soon as you’ve taken the cake out pour over the lemon juice and sugar and leave to cool. A good advice – do not pour too much topping over the cake!
Remove from tin and cut into 8 big slices.
