I got some red currants from my uncle a few days ago… I was looking for a currant cake recipe on google and found lots of them. I picked one I thought would be easy to make and yep the cake tasted very nice. 😀 One thing I have learnt from this baking session – do not forget to let the currants drain before you put them into the pie plate. 😀
- 4 ½ dl plain flour
- 1 ½ dl sugar
- 1 teaspoon baking powder
- 150 gr butter
- 1 egg
- 5 dl red currants
- 1 ½ dl + 2 tablespoons sugar for the currants
- 1 ½ dl oatmeal
- 1 dl sugar
- 1 tablespoon vanilla sugar
- 50 gr melted butter
Mix flour, sugar and baking powder in a bowl.
Cut the butter into smaller pieces and add them into the bowl.
Add the egg and knead until you get a smooth dough.
Press out the dough on a pie plate (20×30 cm).
Mix the currants and the sugar. Pour it into the pie plate.
Melt the butter. Mix oatmeal, sugar and vanilla sugar in a bowl. Pour the melted butter into the bowl and work throughly until everything is combined.
Place the “sprinkles” over the currants. Fold down the edges of the pie dough.
Bake in the bottom of the oven at 175 degrees C for 50 minutes. (If you do let the currants drain, you need less time in the oven). After about 20 minutes in the oven, cover the pie plate with some foil, so it will not get burned during the residual time.
