Swedish “Smörbollar” “Butter balls”

Omg! I have finally made my Swedish Smörbollar. The mixture was absolutely AMAZING! Why haven’t I done this before? “Better late than never…” 😀 Anyway, it sounds a bit naughty when you translate it into English, but hey ho!  You may excuse me! Haha 😀

Recipe (makes 21)

Mixture

  • 150 gram butter
  • ½ dl sugar
  • 2 egg yolks
  • 5 teaspoons vanilla sugar
  • 3 dl plain flour

Decoration 

  • Pearl sugar 

Stir the butter and sugar until fluffy. Add the egg yolks, vanilla sugar and flour. Shape the mixture into small round balls. Dip them in pearl sugar.
Place them afterwards into paper cases.
Bake the cookies, in middle of the oven, at 200 degrees Celsius, for about 15 minutes or until the cookies have become golden brown. Let them cool on a rack.
Keep them either in the freezer or fridge, but let them thaw before they are being served.
Important to use butter, not margarine (!), when baking these cookies, otherwise they will not get the right flavour.
