Today, I made a yummie Vanilla Pudding. Normally you heat the milk first before adding the rest of the ingredients, but I avoided it this time because it’s easier to get no lumps in the mixture if the milk is cold. 🙂
Recipe (makes 3 cups with Vanilla Pudding)
- 2 2/3 cups whole milk
- ½ cup caster sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 teaspoons vanilla extract (add a bit more if you want more vanilla flavour)
- 3 large egg yolks
- 2 tablespoons butter
In a bowl, combine sugar, cornstarch and salt.
Add the cold milk and stir.
Pour all the ingredients (not the butter, egg yolks and the vanilla extract) into a medium saucepan. Whisk it all together and stir it all the time over medium heat until mixture thickens enough to coat the back of a mental spoon. Do not boil! Pour the egg yolks into the mixture and stir.
Reduce the heat and cook for five more minutes.
Remove from heat, stir in vanilla extract and butter.
Pour into serving dishes. Place plastic wrap over the surface and chill before serving.
Decorate the Vanilla Pudding with plums.
